Sauvignon Blanc, Pinot Gris, Chardonnay, Savagnin 11.5 %alc

This wine is a field blend, a collective ferment of most of the white grapes we grow. First Sauvignon is picked and crushed then pressed a handful of days later. Pinot gris is then destemmed into this orange-y sauvignon juice with savagnin and chardonnay skins joining the ferment. Together for about ten days, the grapes are then pressed off to old barrels and clay eggs. Wood to allow the fine tannin to develop, clay for the round lusciousness. The texture is velvety and succulent like a peach - delicious!
